MAESTRO MEZCALERO

Gracias a Dios is a mezcal of double distillation, 100% handmade, made with pineapples of espadín agave and other organic varieties, crushed and fermented in our own Palenque in Santiago Matatlán, Oaxaca, respecting fair trade and with the help of maestro mezcalero Oscar Hernandez Santiago.

MÉXICO, NAMED AFTER THE MAGUEY

More species of the genus of Maguey are used to make MEZCAL than the number of any other plant material utilized in the production of other spirits. In this fact, we support the proposition that MEZCAL has the capacity to become the spirit with the greatest number of flavor and aroma nuances. Of a total of 250 Maguey species, 190 are represented in México (70% endemic).

AGAVE ESPADÍN

It has a short trunk and lanceolate leaves 120 cm long and 10 cm wide, pale green to gray and white border. Each sheet carries a terminal spine about 3 cm in length dark brown. The inflorescence has 3 to 5 m high with yellow-greenish flowers are arranged in umbels. While it is native to Mexico has become naturalized in various parts of the world, such as South Africa and Portugal.


AGAVE TOBALÁ

It is one of the most beautiful Agaves. Form a rosette provided regular and up to 80 sheets with a color that can range from green gray to white. The leaves are almost half wider than long, up to 35 by 15 cm wide. Their inflorescences up to 3.5 m in length, produce small bulbils. In Mexico it is very appreciated for the production of mezcal. Its ideal environment is temperate and arid climates.


AGAVE CUIXE

Unlike other mezcal maguey, it is a plant that grows in areas of calcareous soils and low rainfall. For its trunk is used for firewood and fibers of its leaves are extracted. It is a kind of very variable appearance; height or thickness change and color, size and shape of the leaves. Hence variants with different names are recognized. Mature between 10 and 12 years.

AGAVE TEPEXTATE

The maguey Tepeztate is an Agave species Marmorata, its name is derived from the word "Tepetl" in Nahuatl means mountain or hill, no doubt refers where you can find this agave, as it usually is found on cliffs in the mountain. Its flowering occurs between April and June in some populations occupy Oaxaca to adorn the altars of Easter.
